battery for the job.
I have done a search on Varta Uk's site and this is the model
that fits your car:

I have one of these fitted to my 4.0 litre Sovereign and it is coming up to 12 years old now.
The thing is with these big batteries, you need to have a modern 6 stage automatic charger!
As my car is not used as much as it used to be, I keep the battery connected to the charger while not on the road...keeps it at it's top level and no problems.
Don't waste money on cheap undersized batteries....they are nothing but grief and an under performing battery will throw up all sorts of spurious electronic faults....especially in your weather ;o]

I did some googling and that Varta was mentioned in an old thread. I can get it in the UK for £90 delivered. I also have purchased a CTEK 5.0 charger which is supposed to be the bees knees in car chargers.
Is the fitting simple enough? Is this a sealed battery? Is it AGM? Im very new to this and this will be my first time changing the battery so hoping that its straight forward. Is there any venting system?
Finally, what do I need to be aware of when changing out the battery?

BEFORE FITTING:
After receiving your battery, hook it up for a few hours to your
new battery charger.
These should have a calcium charging setting and will
also automatically have a 'De-sulphation' stage on it.
You will get the ill informed rattle...."Ah ya don't need ta do that....
just bung it in!"....
It is always best to charge a new battery before installation because it
will remove the surface charge from the battery and give it a proper deep charge ready for service.
These are a sealed Silver Calcium technology battery and are the best in the business....as are similar battery brands
Fitting is straightforward.....after setting the battery in position....I prefer to place a rubber mat under the battery....and clamping down (not too tight) reconnect the breather pipe
which goes into the rear (facing back seat) of the battery.
You may have to remove a little bung before replacing.
ALWAYS replace positive cable first, followed by negative cable
quickly....you will here a couple of clicks as it all settles in.
Turn on ignition.....you may or may not need to reset radio code.
Start engine without touching the throttle and allow engine to idle
for at least ten minutes.
While engine is idling, test all windows, locking system, brakes,
headlights and indicators and with foot on brake, run gearbox through all gear positions allowing 4-5 seconds between positions.
Turn off, exit car and lock it, followed by unlocking....this should set
all parameters and ready for normal use. ;o))
