Ref 1999 XJ8 LWB 4.0.
How many bolts are used to attach the Rear Subframe mounting brackets? Obviously 1 to the subframe itself, but to the underside, it looks like 2 (quite rusted heads so hard to tell) or maybe 3?
A pic of the brackets I am referring to.
Are they bolts going into captive nuts?

Yes, it shows the 3 bolts, so I presume there are captive nuts or threaded holes there. Fingers crossed on the rust front then.
Looks like I need some large bolt extractors as the ones I have are too small. Either that or hammer and chisel the thing anticlockwise.

Yes that is the one, just found similar info, but concerned over the state of the bolt heads.
Maybe I can grind them down a little so that the bolt extractors I have fit on tight.
Centre bush bolt is fine.

The workshopmanual indicates 3 "subframe front mounting brackets to body" bolts, but SNG Barratt pre-counts 4 bolts (2 on each side of the car) to put in your shopping basket when you select the bolt (SH112301M) in their handy diagram.
Did you find out if there were 2 or 3? And if there were 3, are all 3 bolts the same?

SNG Barratt diagram shows that SH112301M is 2 per side (total 4) and that SH110201MJ (under "unillustrated parts") is 1 per side (total 2), i.e. same as what is shown on the extract from the Jaguar X308 Parts Catalogue I attached above.
Thanks all, I was a bit confused because I missed that unillustrated parts dropdown. I checked under my car (and yes, I could have done it in the first place if I didn't come across this thread in the middle of the night ).
To wrap up: for each bracket there are 2x 19mm bolts (SH112301M) and 1x 17mm bolt (SH110201MJ) holding the bracket to the body. In addition to those bolts there is a 1x 19mm bolt (BH11218BP) for attaching the bracket to the subframe.
