If the finish is basically sound , you don't need to change it (although the wooden ones are nice).
You will get the best results if you take the wheel off, and do the work in a well lit and ventilated space.
You can buy some small leather dye kits in the correct color, mainly in the UK, but maybe also where you live.
Prep the wheel very very well, then do it an other time ....
There are many websites and videos on the process of cleaning, prepping and dyeing.
But basically, the slower you go, the better the results will be, and you will be amazed how good it can look once finished .... only to realize that you will have to do the rest of the interior

Don't know your finish, but check these out on Dave's site (don't be afraid to email him)... https://shop.everydayxj.com/XJ8_X308...b9181bbage.htm

I actually have a guy local I can recommend, does great wood work, but I figure there should be a closer source in Louisiana. PM me if you want his info.

You should be able to refinish and redye the leather; if you are Carnival Red, I'd guessing you have a sable (Jaguar name) colored leather on the wheel. (at least that is what it was on my Carnival Red with SDZ Cashmere XKR) You won't be able to use the kit mentioned in this link as your wheel isn't black, BUT you can piece one together with the same ingredients in a custom color.

This DIY shows the work and I'm actually going to be doing this in my XKR this winter. My coworker who does woodworking is redoing the wood part for me.
