Definitely sounds like coil in the dial is bad. Are you speaking of the dial itself and/or the steering controls both doing it? What system do you have, the base or the premium?
Check this and do a site search for TSB's and check the electrical diagram...JagRepair.com - Jaguar Repair Information Resource
I still have my premium (with adjustable to standard) head unit if you want to make an offer?

My dial is starting to do the same thing, it will randomly jump 5 ticks opposite of the direction I'm turning. My sister's Chrysler's radio does the same thing, and it's about the same age.
Maybe someone has pulled the radio apart and cleaned the dial contacts? I'm not sure how they work, if it's a rotary encoder or something else. Any TSB's on it?

I had similar symptoms and used this cleaner spray: https://www.amazon.com/CRC-5103-Quic.../dp/B000BXOGNI, which worked for a few months before the same symptoms came back. Used it again and have been symptom free for the past month. Simply pull the radio knob off and spray the cleaner around the shaft of the dial.

Glad to hear that the DeOxit D5 worked for you. CAIG (or HOSA) makes a full line of electrical contact cleaners/lubricants/protectors. I have used that along with their other product, HOSA F5S-H6 Faderlube to clean and lubricate all types of switchgear in classic British cars with amazing results.
I would highly recommend that any forum member working on their own car get this in both the spray and the squeeze tube and use it when R&Ring any electrical connection, especially under the hood. Guarantees a good clean connection and protection against future corrosion.

2-year update: All is well, symptoms (volume going up when turning knob down, etc.) have never returned. Our recent bout of heat and high humidity should have reactivated the problem if it was ever going to come back. I'm impressed with the Deoxit D5.
