X300 rims on a 2001 XJR

Those X300 rims will work just fine. Smaller might hit the front brake calipers, but 17" are ok. Unless of course you happen to have the big Brembo brakes.
If you have really snowy conditions, it might be a good idea to go for narrower winter tires, maybe something like 225/50-17. If you just want to match the size of your summer tires, then go for 255/45-17. My winter tires are 225/45-18, and they work really well. Mine are Continental IceContacts, but I'm not sure if studded tires are legal over there...

the x300 rim deal fell through as the owner of them changed the price from 400 that we discussed to $2000 when I arrived. This however worked out much better in the end as I found a local junkyard with a set of real clean 2000 XJR 18 in rims for the same $400. My local tire shop suggested that I install a set of Hankook 235/45 R 18 snow tires on the rims
