Hi Sylvain,
I'm not sure I understood all the details in your post, but your symptoms typically mean the power steering fluid is low due to a leak. The most common point for a leak is at the low pressure hose from the fluid reservoir to the pump:

If your fluid level is proper, then I would suspect the power steering pump. I don't know if rebuild kits are still available, but years ago I recall that several members of the Jag-Lovers forum rebuilt their pumps.
