1. A T5 is indeed a manual transmission of considerable repute.
2. Some folks have cut and welded a BW 65 or 66 housing to accept a manual transmission.
3. Some auto pedal boxes can be drilled/cut and welded for the additional pedal.
4. Andrew Weinberg reports making a pedal box from scratch for Ls engnes into later Jaguars. 99's or so, as I recall
5. Johnscars of Dallas, Texas offers a "quarterbreed kit for GM to Jaguar.
6. Only issue is to enough torque for the 4th gear unless the rear ratio is greater than the 2.8 found in a lot of XJ's.

I have a manual transmission pedal box (clutch & brakes), if anyone is looking for one. came off a 1964 S type. Does it fit an XJ ?? no clue.
my days of manual shifting are over. I prefer automatics, but I am concerned with John's Cars 700R conversion for exactly what you said, torque in the 4th gear, I think he calls it "lugging the engine" ??? Which of course I have no clue what it is.

Tis been a while since I last drove a stick shift. My first car was a 23 T Ford. a different skill than shifting a stick. So, I had to refine my skills for the Texas driving test n the family 38 Dodge. And, dad had retired from the army and tooka job as foreman with the post engineer! His company car to oversee projects was a WWII vintage Dodge Weapons carrier. I got some stick time on it.
Much later, I drove my 69 Toyota FJ40 to my job in the financial district of SF. Stop and go traffic up to the toll plaza took a toll on my left knee as well!!
Today, probably not feasible. But, would be fun. That and a bicycle. Lost skill, I think not.
