Haynes Workshop Manual
I just bought this (*) and I understand that it is the only workshop manual for the XJ 12 series available. Unfortunately, as the title clearly states, this does not cover the series III latest versions. Is anyone aware of a workshop manual that covers the XJ12 & Double Six series III up to 1992 as some variations were introduced, for example with the A/C R134a gas parts?

Series III V12 owners have always faced a lack of technical/repair info. Whatever the factory offered doesn't seem to be re-published, possibly due to lack of demand.
You might see what JDHT https://www.jaguarheritage.com/ has to offer these days. Years ago they offered a wide variety of re-published technical info on CDs. I have quite a number of these....some are better than others. Some were re-issued with improved content.
In most cases using XJS manuals for engine and driveline work and Series III XJ6 manuals for everything else will generally be sufficient. But there are some Series III features and variations that are different from either of those cars, as you know.
As to the last couple years of Series III V12 production in particular, well, I wouldn't be surprised if Jaguar never published a specific service manual. These were very limited production cars and any unique features and information was probably communicated via supplemental booklets and service bulletins rather than an entire, dedicated service manual.
Let's hear what others have to say. I haven't researched any of this in a number of years. Newer, better information may have surfaced.

Thanks for your comment about the site. As Doug said, the Series 3 XJ-12 is essentially the same car as the Series 3 XJ-6 except for the engine and transmission.
Body, upholstery. and most electronics are the same in both cars so you can use the Factory shop manual for the XJ-6 for many things.

Not to be confused with the XJ-40 body style built during the same years and which I call the Series 4 XJ that also came with 6 and 12 cylinder engines.

I will download everything that is not specific to the engine as I imagine that cooling, ignition, etc will all be different. Again, thank you! It is always very useful to encounter private websites as, in general, they tend to grow and offer useful information. Like yours!
