Nigel yes, only the tops of seats are leather, the rest is Ambla.
However, in older Jags, and in XJ-S 12 cfylinder, the center console and seat mechanism cappings are stitched leather.
example; the center console of my 1965 S type is covered in leather The center console of a 1986 V12 Coupe is also covered in leather. But the center console of my 1984 XJ-6 is covered in Ambla.

Many modern Jaguars (my F-Type, for example) also have full leather interiors - seats completely, door panels, dash, console, even the headliner. Jaguar craftsmanship did not end with the demise of the Series III in 1992.
