odd ac issue

My first guess is the small (cigarette packet size) amp that is tucked in behind the radio, in the inner sanctum, and accessable from the LH console cheek, IF you are blessed.
The 4 way fan relay pack needs to come off, then dig inside and find the thing, then get it out of the dumb clip, and out of the innards.
Not for the owners with low patience levels.
Some of them have a potentiometer on the side that can be rotated to bring the thing back into range.
The LO fan section of the 4 relay pack could be faulty, as in dirty contacts. Seen that many times on the S2 cars. Same system.
The 2 SMALL long thin screws that secure the Mode switch pack to the dash panel could also be loose. Radio OUT, facia off, SMALL fingers to reach the nuts, and slowly tighten them. This has fixed many an erratic a/c operation for me.
I'll stop there for now.
Guru Doug will slide by when he can, and he will have add ones for sure.

I agree that the amplifier is the most likely culprit.
My rationale is that turning the temp knob to 85 sorta 'reboots' the amp. Plus, the problem occurring (if I understand correctly) only when cold air is called further suggests a problem with the brains of the system. A loose connection, or bad relay, or faulty mode switch wouldn't know or care if the system was giving cold air or hot.
There are other possibilities of course. Climate control rationale and my rationale have clashed a few times over the years.

That screw is for temp adjustment....although I can't remember which way is which.
For example, if you set the control to 75º but the system maintains a cabin temp of 80º, you'd adjust the amplifier
The fact that your symptom changes as you adjust the amp further suggests an amp problem....I think. I'll need another cuppa coffee.
