The Ranco thermostat is in the circuit, yes, but, more specifically, its job is to deactivate the compressor if the evaporator gets close to freezing.
The compressor circuit is powered-up via the servo. I'm not familiar with the older circuit design but there might be a relay involved ...in which case the servo triggers the relay.
In any case, a faulty (or disconnected) Ranco can prevent the compressor from engaging
