95 XJS 4.0 oil level problem?

95 XJS 4.0 oil level problem?
Changed oil last night. Thought the Jugs of oil was a gallon. Wasn't till both were used that I noticed they are 5 quarts each. Was told it holds a little over 8 qts so thought with both in would just need to top it off.
Measured oil pan used and it held 10qts to same level I drained out.
(9 qts of oil and 1 qt of flush that was added)
Last night oil on stick still showed below the M and now after sitting all night it is slightly above the M. The AJ16 is the worst dipstick I have ever seen. One side always looks higher.
Confused! If I drain 2 quarts out it might not read on dip stick.
Or does the AJ16 dip stick not accurately show when over filled?
Suggestions?

I would just suck enough oil out such that disptick reads ok when cold and car level. If level under-reads, just pour some back.
If you are doing it via the drain plug, (which is obviously much messier) then do be careful not to overtighten sump plug. The AJ16 sump is prone to cracking at the sump plug boss, which can be very expensive and awkward to resolve!
