If I had the space I would buy a beat up one and part it out. Doors, trim, mirrors, front and back lights, Wheels, Windows, body panels, ECU, bumpers, transmission, engine, diff, IRS unit, hubs, axles etc. Take the units off, clean them up mark em for sale. I'd totally do that. Someone will need them to keep theirs going.

The good thing about doing this is that as an enthusiast, you will take the time to very carefully dismantle the car to minimize breakage, maximize the number of parts that can be used to revive other Jaguars and store them indoors where they will cease to deteriorate (or at least drastically slow down). If that Jaguar continues to sit outside in a junkyard like that, it won't be long before hardly anything is useable. Eventually, they'll sell the sunroof and the whole interior will be ruined the next time it rains. What I really hate is when somebody removes a part under the hood just to get it out of their way while they remove another part they want and throw the greasy thing on the passenger seat. Usually salvage yards keep a car like this Jaguar just long enough to make their margin on it and then crush it to make way for the next, more profitable car (like a Toyota Camry that would be picked clean in a month).
Its great that you would be willing to do it, but I advise to carefully consider which parts you choose to keep as their long-term value may not justify the opportunity cost of storage. I am really into Toyota Supras, have parted out 9, used parts from them to rebuild 3, sold the rest and have almost enough to build one more. Just doing a little bit evenings and weekends, it took a long time to liquidate most of a whole car. What I could very easily sell was "crash parts", i.e. bumper covers, taillights, fenders, etc. along with both interior and exterior trim if it was in good shape. Nobody wanted anything that they could still get new or rebuilt, nor did anybody want "stock" mechanical parts because everybody preferred buying performance upgrades. So eventually stuff like alternators, power steering pumps, automagic transmissions, etc. started to pile up. I managed to get rid of the excess at a loss, still ensuring that they will be preserved for somebody to use eventually, but it had become a "problem" for me after I had to start renting self-storage units for all this stuff that I couldn't easily sell. What I’d do with that rather than part it out is race it. Sell off the interior parts, buy a cheap EBay turbo/ an aftermarket ECU ( Megasquirt is the best bargain. Junkyard search for a ChevyTrailblazer or GMC Envoy, grab the throttle body and injector rail. Crawl underneath a Chevy pickup with a flex fuel emblem, grab the in line fuel sensor and 8 injectors. And put them in the Jaguar 6 cylinder. Stone stock you should be able to pull over 6-700 horsepower.
