My 95 AJ16 XJS suddenly gets hotter!!

Hello guys,
Over the time I have owned my car (3/4 years), I have noticed that it will, under the same weather conditions, run hotter or sometimes cooler....for example, yesterday I drove the car for quite a long time thru a work zone (standstill traffic), then driving over 80mph and then regular city driving. Car never went over 201 degrees ..it was 96 degree weather. On the other hand Friday i was much easier on her, just light city driving....yet she reached 210.....same 96 degree temperature. ....by the way this is all being tracked via obd2 monitor. The cps is new so I know the readings are accurate. My radiator was tossed twice, my mechanical fan is a year old, my aux fans work perfectly (for sure), and I have distiled water and coolant in there. Obviously have had 3 or most thermostats in there. I can tell when the car runs hotter because the a/c becomes less pleasant. Something in the cooling system is a weak link. I am thinking the thermostats or maybe the fan clutch can come and go( ? )
Please help me figure out what is the part that comes and goes

Hard to say.
Next time it's running 210º +, pull over, stop the car, and give the fan a spin by hand. If it spins more than one turn, the fan clutch is weak.
How are the e-fans triggered on this model? Temp only, or is there an a/c compressor (or a/c pressure switch) tie-in? When you hit 210º are the fans working *at that moment* ?

I did what you said and the clutch won't spin freely, so I guess it not likely the problem. The electric pusher fan is controlled by my override switch in the cabin and it's on all the time. E -pusher aux fan (fanS, since I have two) are working very nicely. It's wierd how it will just go back and forth under the same weather conditions. Should I look at the thermostat? Last time it ran hot I noticed it was even doing it at high speed.
