Well seems as though my xjs was used as a combine by the previous owner... all taken from between the radiators

pure water boils at 100c STP (standard temperature and Pressure) 1 atm
your system cap should hold another 16 to 21 psi or 1.3 to 1.5 atm
so it should not boil at 100C

It looks to me that it was working correctly.
make sure it is topped up and not low on coolant...
and don't do like me and forget to put the cap back on.... (both of them)

It should run cooler with all that debris taken out!

it still would be nice if it was running a bit cooler.

haha yeah the previous owner was a farmer... I don't know what he was doing in this car

they all do that ... mine did also... my debris looked a lot more composted...
