Changing coolant on a 4 litre is really easy, as it "self-bleeds", so much easier than a V12. Just set the heater to hot and leave off the pressure cap until it a bleeds out any air.
I would change the 'stat just because it's worth doing and easy when the coolant is drained.

I forgot to mention:
When you pull the 'stat, there will be some coolant left in the housing that then comes out. Remember to fit a genuine Jaguar or OE stat. Cheap 'stat can cause problems. Install with the jiggle pin at the top. And when you've finished replenishing the coolant, check the level the next day when cold and do any final top-up as necessary.
