Your phone might not be compatible with your car. Jaguar has a list of compatible phones by model year. Search Jaguar's website. It doesn't say which phones are incompatible, only the ones that will work.
It appears that you went through the proper discovery process detailed in your Owner's Handbook since you car recognized your phone. Even so, it might be incompatible. I know this isn't what you wanted to read. I hope I'm wrong and it's just a setting on either your car or your phone. If you get it to work, let us know.

I had the same exact problem and I screwed around for weeks trying to get my 2008 to recognize my Motorola Android phone.
Verizon sent me a new phone, just to "eliminate" the possibility of a defective unit. I then did everything to the car, pulled the fuse, docked and re-docked the phone a few hundred times etc.
Every once in awhile the phone would dock, only to disconnect shortly there after. So here's the solution...I purchased (reluctantly) an iPhone 5 and the problem was solved, permanently!

Jaguar Bluetooth Connectivity Center and Pairing Guide
Here's the link to the Jaguar Bluetooth Connectivity Center: Vehicles - Jaguar
Go to the website, select your vehicle, enter the last 6 characters of your VIN, and click Next. On the next screen, use the dropdown box to enter the name of the manufacturer of your cellphone and the model.
My cellphone is an older model Samsung Galaxy S3 (Android) and was listed under both XK and XJ. On the next page you can print a detailed guide to pairing your phone, which you should keep in your glove box in case your phone becomes unpaired and you need to pair it again.

My XJ-R did not have a BT. It had a plug-in for a specialty cell phone that was not readily available. I sought out all manners of custom shops for a fix. Ended up getting a BT device that clipped on the steering wheel. Was very happy my '08 XK-R was BT ready.
FYI, my Galaxy S4 had no problem pairing.

As far as I know, most did. You can confirm your car has it by looking for a small Bluetooth receiver to the left of the sunglass holder. If it's there, your car has Bluetooth capability. My XJ8L has it and I have the Navigation screen. I followed the Bluetooth manual and it was pretty easy to set up with my iPhone4.
