Door latch feels sloppy and harsh

Cliff's Notes version: The door latches on both doors are harsh and sloppy. Is this normal?
Long version: I've fixed the major issues, now I'm down to working out all of the piddly little issues with the car. Minor things like door latches. When I pull on my door handles it seems like it takes too much effort to get the latch to disengage, then it suddenly pops, rather harshly. This happens whether the windows are open or closed.
When I I had the car towed to the dealer to get the water pump replaced, the door latches seems smooth and flawless when I picked it up a few days later. I assumed the dealer noticed the harsh-feeling door latches and adjusted something. But a few days later both doors went back to their old ways.
Is there some sort of adjustment on the latches? The doors seem to line up properly, so it doesn't seem to be an issue at the hinges.

Mine does the same thing. Some days it is smooth as silk, other days I have to give a small tug like it's catching on something. I sprayed lithium grease into the latch mechanism (because it's accessible) but it did nothing as I expected. Someday I'll take off the door panel and get a look inside. Or you can and tell me what's wrong
