No entirely sure what you are asking but...
The unlock is controlled with the handle that opens the door. When it is pushed all the way "in" the door is locked. To unlock the door you just pull the door handle out half way and that unlocks it. If you then pull it all the way out the door opens...
The ventilation modes are controlled through the headunit/graphic display under the climate menu.

If you are sitting in the drivers seat and pull your drivers door handle out half way your will unlock both doors. That's the way it works on mine.
Then the person can open the passenger door from the outside and get in.

Sometimes my better half has tried to open the door at THE EXACT SAME INSTANT as I am unlocking it...which renders the door unusable!
I have to then re-lock the doors and unlock them again, all the while telling her to follow my instructions to the letter!
But this has happened to me with other cars too.

That issue has frustrated me on both my '05 and '08 XK. I too, figured out to open the passenger door as you described and it works; except when it does not. I still have not figured out the variables when it does not work that way. Perhaps, after an intended passenger already tried to open the door or having her hands on the door opener.... not sure but, in some similar instances I could not open the passenger door by pulling out my door handle half way and had to finally use the FOB key while cursing out Jaguar for the embarrassing situation.

Initially, my car was set up to only unlock the driver's door when the driver's door was opened (with key in pocket, obviously). This would result in me getting in the car, closing the drivers side door, and having the drivers door be unlocked but the passenger door locked. So to unlock the passenger door I had to push the handle in (lock my door) and then pull it back out (unlock it, which would unlock both). This seemed silly to me so I changed the setting via the menu to make both doors unlock when the car is unlocked initially.
