I am looking at updating my gearshift knob to an all wood version, but am unclear on the official color of my wood trim. Any guidance? Maybe it’s because of the caramel leather trim but I can’t quite tell if the burl-wood is maple vs walnut, etc. My exterior/interior color codes are HDG/SEP if that provides any clues. Thank you.
For 2007, only two colors of wood veneer were available - Poplar (light) and Burr Walnut (dark). See the Sticky at the top of this Forum's Home Page for Sales Brochures, which is the source of this picture.
Your wood appears to be Burr Walnut, as it doesn't have the bright yellow-orange hue of Poplar.
P.S. You're not the original owner, so it's possible that a previous owner replaced the trim with a non-2007 color. Various color trim panels were available as accessories from Jaguar dealers, and replicas and wraps are still available from aftermarket vendors.

A wood shift knob is unlikely to match your wood veneer, as real wood veneers of the same color vary greatly. IMHO, this black logo knob that matches the black shift panel would look better.
Yea, I saw that post. Quite frankly, the more I look at the veneer, it seems to be a cross between burr wood and poplar! Either that or the lightness of the caramel interior plays tricks on the eyes! I found this shift knob that seems like it could be a good fit. Kind of covers the spectrum. I’m not so sure about the piano black, which while stunning, might be too severe with my interior...
Definitely a Poplar finish. Burr Walnut is a lot darker than the OP's interior, though he does have a darker section of poplar than most poplar veneers tend to be.

Dark green, dark brown and black colored mineral stains/streaks are allowed, as specified. Minimal number of natural characteristics desired. All natural characteristics shall appear random, not patterned, across the surface of the finished component. Natural characteristics must not detract from an overall, pleasing to the eye finished component appearance."
