Default XK convertible Replacement tops Gahh EZ or OEM?

Any suggestions on best top?
I have a 2009 convertible. This is the second top to go bad. Jaguar did a bad job on these tops. Is the original top the German A5 canvas? or is it the Sonnendeck? Stayfast canvas seemed to look different than the original. The EZ and the Gahh, both @$1750, have lifetime warranties on glass staying glued. I think the EZ may have a plastic strip to cover the edges. Gahh has no stitching or plastic. What and were is the OEM?

Also, debating buying the top and finding someone to put it on. Seems you save a little bit. Not sure Gahh is available to purchase. EZ is for about $771.

I am also curious - can most shops change out tops? Is there some intricate Jaguar thing that can be messed up? Does it have to be aligned? I don't want those damn cables to break again.

Just curious but the EZ only covered MY 2007-2011. Was there a size change where the 2012-2015 used a different top.
