I am not sure what dealer you are speaking of but if it is a Jaguar dealership I would pose the question to them. At times age, mileage and environmental temperatures will often dictate the proper oil to use along with what the manufacture is recommending. Perhaps neither.
I am not really familiar with the later models but manufacturers *usually* have a suggested viscosity for general use but allow that a *range* of different viscosities are acceptable.
I take out the owner's manual and see what it says. If the 5/30 recommendation is written in blood and illustrates an errant owner blindfolded in front of a firing squad, I'd go back and ask for a fresh oil change.
If the 5/30 is more of a suggestion than a commandment, well...you get the idea.

I don't know what MY you have but the manual for my 98 XK8 lists 5w-30, 10w-30, and 15w-40....it also says "To choose the correct viscosity grade, consider the temperature in which the vehicle is driven. The use of SAE 5W/30 is PERFERRED in most climate conditions, although SAE 10W/30 or 15W/40 oils are acceptable in moderate to hot climates."
