Fluid Flushes- When to complete?

Hi All,
Can you give me some insight to when fluid exchanges on our cars should be completed? The passport to service book doesn't go into detail on transmission, differential, or power steering.
I have a 2001 (4.0L Supercharged, 5 speed Mercedes auto) with low miles (about 10,000) and am wondering what I should look into changing.
Brake Fluid- Every 2 years
Coolant Flush- 5 years or 150k miles
Transmission-?
Differential-?
Power Steering Fluid-?

My opinion:
I'd never wait 5 yrs for coolant change. 2 yrs Is my vote.
Tranny: while I have the lesser transmission, I think everyone agrees on about every 80k miles.
Rear end - very (very) few of us change this fluid periodically. Given the placement of the plug it's a really difficult job to say the least. If you search this site, there are a couple of good ways to do it, at least 1 of which describes a way to access the fluid.
Otoh, I had the misfortune of a failed rear end. Cost a good $2000 to install a used one.
I'll leave the evaluation to more experienced mechanics on this one.
power steering- I have no info.

Graham, I think it would be great to have this information on the X-100 forum as well. I’ve been thinking of doing power steering and differential fluids during the holidays. I’m at 72,000 miles and 14 years of age on my car.
With regards to power steering, I was thinking of doing a gradual drain and fill. That is, use a turkey baster to remove what is in the reservoir and add new fluid. And repeat that every 2 months during the entire 2020 year. Has anyone ever done that?
