Being in the Caribbean, I can assure you that heat in the cabin is real. Since my heater core brushes are worn, my A/C basically works in 2 modes. Off and winter mode. However, if I find that I need my windshield to defrost, all I need to do is just let the car idle with the aircon off for 10 minutes. The heat that radiates into the cabin will surely defog the glass.

You would think that, but no. I used to have a convertible and I can tell you that driving with the top down around here is a drag. The sun shines too brightly and the humidity is very high, to the point where driving without the top is actually less comfortable. Driving without the top meant that I'd be sweating AND getting sunburned. The aircon, while powerful, could not keep up with the heat. Getting into the car at around 12 pm was hellish, mind you it was a triple black XK8, but it seemed like hell's furnace was turned on inside the car even after 15 minutes of having it parked. The convertible top had a habit of absorbing heat and radiating it onto the interior of the car. I'm pretty sure that I could cook a pizza inside the convertible if I left it inside the car for about an hour. Rain can happen at any time of the year, sometimes with little warning. As such, I could never just let the top down for extended periods. I was always wary of the impending green shower. And when it was raining HARD, sometimes, water would leak through. However, the sound the rain drops made when they landed on the top was relaxing. Driving without the top was comfortable only between 4:30 to 5 pm and at any time before 7:30 am. Keep in mind that the sun sets between 6 and 7 pm and rises between 6 and 7 am. This is year round. Puerto Rico only has two seasons. Summer, and slightly less hot and more rainy summer.
Now I have a coupe (silver on black) and it actually doesn't get as warm on the inside and the Aircon has to work less. I never finish my drive sweaty and sunburned in the coupe.

Right-o folks, a little update:
It would seem I was worried about nothing (just a little inexperienced), I went for a decent drive today, got the engine up to the temperature that I was concerned about, and measured the engine temperature after with an IR thermometer, I went over the whole bay and the highest I could get was 91C, so it looks like when I get my OBD2 it’ll tell me 92-98C :-)

I had the same concern when I got mine, seemed to run hot, doing what you're doing (getting the data) convinced me it was OK. It does take a bit of getting used to seeing the heat haze coming out of the hood louvers at the lights and the popping and pinging that it does as it cools down when shut off but it is all part of the experience!
