Besides the wood, (and the issues getting a matching center panel unless you replace all the dash wood), you will need the 'Minor Instrument Pack', part number LJB4310AB. It list for $424 new, but you should be able to find a used one for a lot less.
What I am not sure about is if any programming is required. FROG is in the midst of this upgrade and I think he was going to be testing out a used gauge pack, so I hope he can chime in on this. There is also a harness that goes between the Major and Minor instrument packs. I am not sure if it is present or not on navigation cars...another question for FROG.
There is also a fairly shallow space behnd the wood veneer. Whether that needs to be trimmed or replaced would be my final question for FROG.
I was also wondering about the oil pressure sender. Jaguar does not list one (at least that I could find)...they just list an oil pressure SWITCH for all cars, whether thay have the oil pressure guage or not. That leads me to believe that the oil pressure guage is 'fake', just like the coolant gauge, and only indicates 'normal' or 'low' pressure conditions, not the real oil pressure.

Hey Bass, are you wanting to do this because you don't like the look of the nav unit, or do you want to change to gauges because the nav system is useless? Several people have swapped out the nav unit for other units that actually worked. If you're interested in possibly doing that, I can point you to several threads to look at.

Yes, as White says, I am in the (very slow) process of doing this job. The sat nav is useless and when I have my polarizing sunglasses on, I can't read the clock!
I bought a brand new instrument pack from UK eBay for £20 a couple of weeks ago, but that's all I have done so far. Rev has done an excellent video on how to remove the veneer, but I haven't had time to do it yet.
I have contacted a few breakers in the UK and asked them to look out for a suitable piece of veneer for my dash (+ chrome embellishers). I have been told this will be about £60.
Then I have to address the wiring harness issue.
As you can see, it is very much a thought experiment at the moment
