New thermostat in an XK8 model year undetermined.

. . . it still says engine coolant low . . .
The instrument panel displays that the engine coolant low.

my temp hand id normal only only thing is I have to keep putting water in 5 or 6 times . . . .
The temperature gauge is normal but you have to continue to add water continuously.

. . . wat else do I gotta do to resolve da problem
What do I need to do to fix the problem.

If it is losing water, you have a leak. It is a closed system.

Either it is leaking out and you haven't found it yet, or it is leaking internally. The good news is that head gasket issues are rare on these cars. Do a pressure check and fix that leak.

You might also consider using punctuation marks. Even ee cummings was sometimes hard to read.

ee cummings might have used all lowercase, but there were no spelling errors.

Going back to the OP - does the XKR run hotter than the XK8?

I have just installed an UltraGuage (all running fine and dandy on my 2001 XKR although needed to force the ISO protocol) and the "static" temperature after 10 miles of urban stop/start driving is steady at 96*C (204*F) - it briefly hit 98*C (208*F) after a short and totally illegal burst up to 90MPH but quickly dropped back down to 96*C so clearly thermostats/fans seem to be cutting in and working fine but I noted earlier comments that this was considered high on (I think) an XK8.

I've set my coolant temp alarm to 110*C (230*F)

I have driven a 2000 XKR several times while doing repairs. Using the Ultragauge it generally reads 187-195 F, cooler than my XK8. I observed that the XK8 ran cooler with the thermostat that I replaced last fall, so I'm going to swap them again to confirm.
My suspicion is that some thermostats open more than others.

. . . and some temperature sensor varistors are not accurate. At 90*C 30 ohms is 10*C. I had to select the most accurate of 3 new sensors to get the OBDII data port to somewhat closely match an IR temperature gauge.

I previously used an Engine Watchdog temperature guage - the sensor was mounted on a front valve cover stud and used to read around 88*C when stable - clearly going to be less than actual coolant temp - I'm guessing that the 8*C temp difference between the 2 sensors is in the right ball park so am happy the actual coolant temp is accurate on UltraGuage.

Default IR temperature gauge

I have had what I considered an inexpensive IR temp gauge for years and used it on many occasions in auto repair work. This thread on engine temp issues seems like an appropriate place to make note of what appears to be a full function gauge for under $10. While not Snap-on brand at over a hundred dollars it will probably be all a hobby mechanic will ever need. Think I will buy one just to get the additional function of laser aiming which mine doesn't have.

I just thought I would share that recently on my 2004 XK8 I replaced the thermostat, upper and lower radiator and bypass hoses, the plastic thermostat housing and crossover pipes, etc, with Jaguar OEM parts which included the temp sensor...I believed after doing the work that the real-gauge-ed coolant temp needle seemed to be sitting a bit higher temp during normal running than what I had been used to. And BTW, OBDII readings seem consistent with the real-gauge as expected. So I used my infra-red reader and it seems that infra red is showing about 7 degrees hotter than the sensor. But I found it difficult to get a good reading with the infra-red gun. If I point it at the brass sensor area at about 2-4 inches away, it shows 178 degreed F, but on the black plastic that the sensor is threaded into it reads 207, while the OBDII shows about 200. I just can't be positive where exactly to point the laser. In general I believe that my infra-red gun is fairly accurate.

Trying to measure on the plastic is not going to produce any realistic reading. The brass temp sensor would seem to be the logical place to measure but it is so small that readings are questionable and often not repeatable. I ended up using the aluminum head at the front near where the hottest water leaves the head. That has got to be the highest temp point.
