BMW M variants specify a specific Castrol 10W60
Mustang Cobra's specify a 5W50
.... and Aston Martin models employing the Jaguar based V8 require Castrol 10W60.
Owners in the US are buying the BMW oil because the specific AM Castrol sku is not
available in North America. Same base design and forgings, completely different oil
specification from Jaguar. Bear in mind that the home territory of Aston Martin is
far more temperate than Atlanta.
Two sets of engineers, one engine design, two wildly disparate oil specifications.
So when someone says "the engineers know best", it is important to ask which
engineers, how much influence they had in the published materials, and what
was their goal.
Any particular engineer might know very well what and why he said something.
The problem for the reader is the why.
If the why is CAFE, well the guidance is of no real use vis-a-vis engine protection.

why so complicated ... oil seems to be a quite difficult theme ...
the manual says 5W30 ... point
So use what the manual says ... buy Mobil1 or Shell
Using new kind of oils isn´t so clever because you have to notice, that the engine is developed quite a few years ago. Jaguar knows, whats best for the XKs.

hmmmm, you mean 'knows what's best for xk's'...as in PLASTIC CAM CHAIN TENSIONERS, WATER PUMPS, 1/4WINDOW REGULATORS and some other brilliant parts/components, etc,etc?!!!

Best advice I can offer is use Mobile 1, 10/40 if your engine is quiet on it. If it has a slight tapping at idle then more than likely the VVT cam drive is a little worn, so change to 10/30 or 10/40 dynasuar oil, that'll help damp down the noise.
I personally believe. "Plums" has a valid point. Jaguar oil viscosity recommendations are more about fuel mileage and meeting Cafe regulations than engine protection. Note the more knowlegeable cognoscenti have recommended heavier oils than the OEM, up to and including 20/50, which was the gold standard for many years for high performance engines.
