Default Stupid question about oil changes

Did my oil change for the first time myself.

Bought 7 quarts of Castrol GTX high mileage synth blend $40.00
Order a new filter from jaguar $12.00

Mine takes 6.4 quarts according to the manual and on the jaguar oil filter it said start engine then fill to level (wow I think they should revise that statement).

Put 6 quarts in then started and filled it till it was between the two dots (max/min). I took all seven quarts just to get half way between the dots. Seemed odd to me it took all that just to get half way. Drove home and seemed fine, the next morning I started the car and it sounded a bit strange and loud. Got to work and checked the level with the car off. It was about a quarter of an inch above the max dot.

Drained out about 1/2 a quart till it came down to the max dot. Started the car and rechecked and it was at the min dot. Shut off it's at the max dot.

So I guess my question is where and when do you check the oil level? Runing or Not, and where should it be?

I also saw in another manual it takes 6.88 quarts. I guess I have the oil cooler and was wondering if that's what draws the extra oil when running. I understand that when running the oil is being moved around the engine and the level would be a little less but from max to min seems a bit much.

Oil level should always be measured not running and preferably cold, so the true amount of oil is in the sump, if you've been running I'd give it at least 10 minutes to allow the oil to drain back to the sump.
When doing oil changes I always fill to the max mark, start the engine and run for a few minutes to circulate, stop the engine, leave it for 10 or 15 and then top back up to max.
