If Neil only wants to lock the glove box and luggage compartment when he leaves the vehicle parked with the top down, this isn't going to be an issue because his remote or black master key will disengage valet mode.

Sklimii’s house pony security feature
Wouldn’t it be easier to install Sklimii’s house pony mod. But you would have to deal with some maintenance issues- excessive fuel demands, waste water leaks, brown exhaust deposits, and throaty noises. Not to mention scratches on the leather interior. LOL!

I use the Valet Key quite often! Every time I go to the Medical Center here in Houston....rather than drive up 3 or 4 stories in the Parking Garage to Park, I drive up to the Valet Stand, then I lock my Glove Box and push the Valet Button (which by the way, is located right next to the Steering Column. The outside Vent looking thing is for the for the Adaptive Cruise Control button....It turns On & Off the front function that puts on the Brakes if you get too close to the Car in front of you! My current XKR has the Vent looking thing as I don't like Adaptive Cruise Control.. Then I hand the Valet Key over to the Valet Guy and head toward the Doctor's Office some where in the 25 Story Medical Tower.....I also do the same thing when I go out to one of the Restaurants here in the Houston area....after all these years, I have not had a single problem with a Valet.….

Have not fiound a 2004 wiring diagram yet. This is a screenshot from jagrepairs.com 2003 diagram showing the Valet
switch wires are B black (ground) and YU Yellow/Blue to BPM.
The wires behind my missing Valet switch are B Black and Red.
Can someone verify the Valet switch wire colors for the 2004? or provide a link to the 2004 wiring diagram if that is easier.

I haven't seen an electrical diagram later than 2003. JTIS opens this if 2004 selected.
The dimmable lighting for the valet switch shows red and black - as in your picture - but your wires are different gauges. I'd try to trace those further back to make sure a PO wasn't powering something with them. Or measure the voltage across and see if it varies with the dimmer control.

Update. These are unrelated to my missing Valet switch and wiring
They go through the firewall to this battery power post. Note the missing fuse here and larger diameter red wire in first pic. Maybe power for a radar detector or something.
The red connector in this photo is to my battery maintainer
